Raw Avocado Kale Salad

This is a super easy dish packed full of goodness. It will soften but have a slight crunch. You can add this to any meal or use as a base for a salad to take to work. Sauerkraut (raw fermented cabbage) and a dash of cayenne pepper can give it some zing!

This is before you mash it up with your hands!

You Need

  • 2 Handfuls of curly Kale
  • Half a Avocado
  • Few glugs of Olive oil (organic extra virgin if possible)
  • Juice of half a lemon.
  • Pinch of himalayan or sea salt

Wash the kale and pull the hard stalks off the ends. Add the avocado, olive oil, salt and lemon and scrunch
together with hands until it is all mixed and mushed well into the kale.


There you have it… amazingly easy and amazingly good for you! No excuses not to get your greens!!
